I did a sizable cook for some folks at work. I seem to do thst often now a days. Anyway, I put a brisket and two butts on the Akorn Friday night at about 8:30pm and let them smoke over night. At 4:30am I had them out and went back to bed. I got up at 7am and started working them up. When I finished I put four pastramis on the Akorn and four racks of spares on the little offset.
