I am a pretty much Catch and Release fisherman. I do keep saltwater fish and there is nothing better than bluegill fried. I fix fish pretty much one way when I keep them. I fry them. Corn meal, salt, and pepper. Fried crispy. Is that weird? Is there a better way? Or am I just set in my ways? (we do make sushi from time to time but that's a whole other thought)

I hope its not weird, cause I do pretty much the same. My brother is always giving me grief. He will say " your the only person I know that I would say has caught over 10,000 trout and never kept a dang one of them " My wife occasionally eats trout, but I never touch'em I agree with you on Bream and Bluegill though , and Crappie runs a close 2nd My dad use to take me to a farm pond that belonged to a neighbor was about a half mile walk through the woods. We would catch bream ; clean them , roll them in corn meal and fry them in hot grease over the campfire. There was a thicket of long needle White Pines at one edge of the 3 acre pond. My dad had dug and rock lined a simple fire ring there years before when he would take my older brothers. He would pitch a Tarp and para-cord tent, and lay out blanket rolls on a bed of White Pine needles. We would get up the next morning make sure the fire was completely out, re-roll our blankets and the tarp and walk back through the woods to the house. Like I said it was only about a half mile from our house, but to a 5 year old it was an expedition a grand adventure That memory may be why Bream rolled in corn meal taste so good. Who knows for sure?............ .........Tentwing

Hey when it comes to panfish, Bream and Crappie, good ole salt, pepper and cornmeal is my way as well.

I second the tried n true cornmeal method - I add a some garlic powder and if I'm being decadent, I fry up bacon first and then fry the trout in the grease.
